Le Relais, the restaurant of the oldest operating hotel in the Eastern Townships, Auberge Knowlton, is looking for an innovative and experienced Head Chef to lead a dynamic and eager culinary team. The ideal candidate must be creative, organized and motivated to develop and execute a fresh, tasteful, bistro-style menu.

The candidate must have a minimum of three years experience in a similar position and must have experience in personal management, culinary standards and team-leadership.

Tasks and responsibilities :
• Overall responsibility for the kitchen’s daily operations, both in preparation and during service.
• Liaising with the relevant companies for food orders.
• Creating new dishes and menus while keeping a high quality.
• Ensure promptness, freshness and quality of all dishes.
• Coordinating cooks’ tasks and teaching where needed.
• Standardize menu costing procedure for every plate.
• Design standardized food presentation guidelines for each dish.
• Interviewing and hiring new staff.
• Maintaining/raising the food’s profit margins.
• Monitoring and controlling stock levels.
• Ensuring correct stock rotation procedures are followed.
• Implementation of health and safety procedures in the kitchen.
• Estimating costs and ensuring all purchases come within budget.
• Coordinating weekend Table d’Hôtes, special events and group menus.

Type of employment:

Full time, Permanent

Salary:

$24.00 to $30.00 per hour depending on experience.

Training:

DEP/ AEC or Certificate (Desired)

Experience:

Min. 3 years in a similar position (Desired)

Permit/certificate:
• MAPAQ - Ministère de l’Agriculture, des Pêcheries et de l’alimentation du Quebec (Required)
• WHIMIS - Workplace Hazardous Materials Information System (Desired)
